Prawn Cakes

Mince 1/2 lb of minced shrimps.

Mix with 1 clove garlic (crushed) until turned into a paste.

Add 1/2 teaspoon wheat flour, 1/2 tsp. fish sauce, 1 tsp. oyster sauce, 1 oz of sweet corn kernels.

Add 1 tsp. sugar. Mix well.

Shape into 8 flat balls.

Deep fry for 5 minutes until golden brown.

Remove from oil, drain onto paper towels. Serve with deSIAM Sweet chili sauce.

Mild blend of herbs and freshly ground spices

Yellow Curry Recipe

Serves 3-4

Heat 1 Tbsp of vegetable oil in a sauce pan until very hot.

Add 1 sachet of deSIAM yellow curry paste.

Stir-fry until an aroma develops then add a little coconut milk.

Add 10 fresh medium sized shrimp (or 1 cup of diced chicken).

Stir-fry to coat the shrimps with the paste.

Stir in 1 can (14 fl oz) of coconut milk and 100 ml of water. Bring to the boil.

Add 3 cups assorted cut-up vegetables (potatoes, onion, cherry tomatoes).

Add 1 tsp fish sauce (or some salt), and 1 Tbsp sugar.

Simmer until cooked through.

Garnish with fresh cilantro.

Serve with steamed white rice.

Refrigerate after opening.

Thai Red Curry (serves 4)

1. Heat 1 tbsp. vegetable oil in a sauce pan until very hot. Add the sachet of red curry paste. Stir-fry until an aroma develops then add 1 tbsp coconut milk.
2. Add 3/4 lb beef fillet cut into bite-size pieces. Stir-fry to coat the meat with the paste.
3. Add 1 can (14 fl oz) of coconut milk and 1 cup of water. Bring to the boil.
4. Add 3 cups assorted cut-up vegetables (eggplant, baby corn, cherry tomatoes). Add 1 tsp fish sauce (or some salt), 1 tbsp sugar. Simmer until cooked through. Garnish with fresh basil. Serve with steamed white rice.

Chicken Skewers "Satay:

Serves 2

Cut ½ lb of chicken breast into thin strips in a bowl mix 2 cloves garlic (crushed) with 1 tsp yellow curry paste. ¼ cup of coconut milk. 2 tsp salt and 1 tbsp sugar.

Marinate chicken with this mixture for 30 min.

Thread up strips of chicken on bamboo skewers. Grill in oven or in a big pan.

Serve along with deSiam peanut coconut sauce.
